I proposed earlier that he could convert the Fusion VM (as you’ve also proposed) but if for some reason that’s no option there should be no problem installing 10.6.8 Server from the original discs into a VM configured for it (assuming he has a physical DVD drive connected to the host that Parallels recognizes - it should recognize any standard USB DVD drive).

Software for the guest (including the original boot/installation OS) doesn’t have to be compatible with the host in any way. (That kinda defeats the purpose anyway doesn’t it?)
